Up Periscope

What Ho! Up Periscope was concocted by two rakish young seamen and longtime bosom friends: Sean White (of Little Fish) and Ray Girard (of Yonkers Brewing Company). Up Periscope is an oak barrel fermented sour saison, dry hopped with whole cone Crystal hops.

Lay & Love is a blend of foeder & wine barrel-aged sour red & blonde ales, with an average age of 2.5 years. Apricot Reinheitsgewhat!?

Quick-sour wheat ale with apricot & spices.

Our “Reinheitsgewhat!?” series of sour ales is our equivalent to the ubiquitous “kettle sour”. We don’t sour these beers in the kettle, rather, we use a type of wild-isolated yeast called Lachancea to quickly ferment and produce lactic acid in 2-3 weeks. Wha’ Me Eat – Cucumba

We brewed this farmhouse ale with our friends at Yellow Springs Brewery. Ohio malts from Haus Malts, Comet hops, and a huge amount of locally grown cucumbers from Cowdery farms went into this unique brew.

Pomegranate-Raspberry Reinheitsgewhat!?

“Reinheitsgewhat!?” is a series of beers inspired by German Berliner weisse. However, it leaves the malt-hops-water-yeast constrictions of the Reinheitsgebot behind. We actually use no hops, but rely on acidity and interesting herbs or spices to provide a counterbalance to the beer’s sweetness. Many, but not all, contain fruit.

Beechwood Lightest

Taking a cue from a certain American lager that is transported by Clydesdales and aged on steam-neutralized beechwood, we took a keg of “Our Lightest Beer” and aged it on hand-toasted beechwood staves. The wood flavor is subtle but evident!
