Reinheitsgewhat!? Rosé

Our “Reinheitsgewhat!?” series of sour ales is our equivalent to the ubiquitous “kettle sour”. We don’t sour these beers in the kettle, rather, we use a type of wild-isolated yeast called Lachancea to quickly ferment and produce lactic acid in 2-3 weeks. Baltic Porter.

Come At Me, Beau!

A “Beau-hemian” pilsner, dedicated to our original taproom manager, Beau Nishimura. Brewed with only the finest German pilsner malt and Czech Saaz hops, and fermented to crispness with our preferred lager strain.

Flavor Profile: Crisp lager, with a touch of sweet grassy malt. Medium bitterness, spicy / herbal hop profile, very clean finish.

Pawpaw Weizen

100% Ohio-grown, German-style hefeweizen with locally-grown pawpaw fruit!

The base of this beer is the same hefeweizen as “Vax Up, Yo!”. After primary fermentation, we add locally-picked and processed pawpaw puree from Integration Acres (Pawpaw is a native Ohio fruit that is very squishy when ripe, and has notes of banana, mango, and such).

Jeffs & Sherries

100% Ohio-grown saison in the “hoppy saison” archetype. We like to know our farmers personally. We are very partial to Auburn Acres hops, grown by Jeff & Shari Bailey. Coincidentally, we also work with Jeff & Sherri Gochnauer, who own and operate Sugar Creek Valley Farm, and grow 2-row Scala barley, which is then malted by our friends at Haus Malts. ... Read More

Ohio grown wheat, barley and oats with Simcoe, Centennial, Falconers Flight and Citra hops. Spiced with ginger, orange, and lemon peel.

Our own take on a Brut IPA, brewed with a tropical ale yeast and hopped with Michigan Cashmere, Crystal and Mosaic hops.

Up Periscope

What Ho! Up Periscope was concocted by two rakish young seamen and longtime bosom friends: Sean White (of Little Fish) and Ray Girard (of Yonkers Brewing Company). Up Periscope is an oak barrel fermented sour saison, dry hopped with whole cone Crystal hops.

Wha’ Me Eat – Cucumba

We brewed this farmhouse ale with our friends at Yellow Springs Brewery. Ohio malts from Haus Malts, Comet hops, and a huge amount of locally grown cucumbers from Cowdery farms went into this unique brew.
