House-made pappardelle with bolognese is one of our go-to winter dishes - it’s ultimate comfort and delicious. Our bolognese is made with @dexter_run_farms_and_lodging beef, @smokinggoosemeatery cured pork, and served with mint, lemon crumb, Parmesan, and fresh ricotta made in-house. Dry-hopped Ohio Pilsner with Brettanomyces.

A collab with our friends at Wandering Monsters Brewing (Cincinnati, OH)

Vallée Rustique is inspired by those classic Brett beers of Belgium, and it’s brewed with 100% Ohio-grown barley & hops. It’s brewed simply, but you’ll find complexity in every sip, due to the long secondary fermentation by Brettanomyces yeast.

Sourcing: Pilsner Malt from Rustic Brew Farm, Crystal hops from Ohio Valley Hops, Comet hops from Auburn Acres, and water from our Athens county wells. Bottle conditioned.

Tasting Notes: Pineapple and moderate funk aromas, firm bitterness, bone dry, and very low acidity.

$10.99 per bottle with no limit. No draft, but cold bottles are available to drink on-site. Will see distribution at select bottle shops in Cinci, Dayton, and Columbus areas.

SAISON DU POISSON, 2024 Estate Wet Hop Edition

100% Ohio-grown, wet-hopped saison

This golden-hued saison is brewed with Ohio-grown barley & triticale, and fresh, wet hops from our arbor, just footsteps from our brewery doors. It’s fermented with a mixed culture of saison yeast, thoilized ale yeast, and Brettanomyces.

Bottle & keg conditioned, this beer will taste hoppy and juicy when fresh, with more barnyard character developing as it ages at cellar temperature.

Tasting notes: Big citrus, extra-fresh hop aroma, paired with classic saison bubblegum and spice notes. Light leathery bitterness and funk from Brett. Dry, funky, bitter, sippable.

6.5% ABV, not gluten reduced.

$10.99 per bottle with no limit, and will see distribution to select bottle shops in the Cinci, Dayton, and Columbus areas.
