Sunfish is our mixed-culture, barrel-aged saison, brewed with Ohio wildflower honey. A large majority of the malt and hops were grown and processed in our home state of Ohio. This bottling (our third) contains a blend of barrel-aged saisons with an average age of 1 year, which we blended and bottle conditions with honey as our priming sugar.
We brewed the first batch of Sunfish in 2016, as a way to raise funds for the solar array at our brewery. We are happy to say our solar panels are now generating 20Kwh of electricity for brewing. (We also purchase wind power credits for the remainder of our electrical needs.) Thank you for helping us keep it local, sustainable, and fun as we “green” our business and become more deeply rooted in the agriculture of our region.
