Spelt, an ancient cousin of wheat, grows exceptionally well in Ohio, so it was an obvious choice for our flagship saison. We brew this beer with 25% Ohio Spelt and 75% Ohio barley, malted by Haus Malts. The Ohio-grown hop varieties change due to availability, but currently include, Crystal, Cascade, Nugget, Chinook, and an unidentified “Mystery Hop”.
We ferment this beer with our “Farmhouse Friends” blend of our favorite saison and Brettanomyces strains. The draft version is force-carbonated and served fresh, while the bottled version is dry-hopped, bottle-conditioned, and allowed to go through a minimum of 2 months further conditioning in the bottle to bring out the Brett character. This highly effervescent beer is a real testament to the terroir of our state!
